Turkey & all the trimmings

Your choice of one each of turkey, gravy, stuffing & cranberry sauce

Turkey

  • Smoked – if you’re tired of the traditional, let us smoke a turkey for you; just tell us how you like your rub – mild or spicy.  Serve room temperature or hot from the smoker
  • Brined & seasoned, ready to roast – two day’s work of brining, air drying & seasoning yield a succulent bird with crispy skin

Gravy - all made from turkey stock base

  • Traditional turkey, with or without giblets
  • Cider-sage - a nice accompaniment for cornbread stuffings

Stuffing/Dressing

  • Oyster – the New England favorite, loaded with oysters, spinach & bacon
  • Southern cornbread & sausage–seasoned with fresh parsley, thyme & scallions
  • Country bread with smoked ham, goat cheese, hazelnuts & dried cherries
  • Wild rice, apple & dried cranberry
  • Quinoa stuffing with dried apricots - suitable as a vegetarian main course
  • Mushroom & parmesan bread pudding – a stuffing alternative suitable as a vegetarian main course, rich with cheese & cream

Cranberry Sauce – all made from whole, fresh cranberries

  • Traditional, with a touch of orange peel
  • Pear-ginger - slivers of ginger & diced pear add depth & texture
  • Chai-spiced – infused with cinnamon, nutmeg, cloves & ginger
  • Cranberry-apple chutney – thicker than sauce & not as sweet, with chunks of apples & raisins

Sides

Your choice of three

  • Garlic mashed potatoes
  • Sweet potato & Yukon gold potato gratin – both potato standards in a single dish
  • Carrot & potato mash
  • Creamed kale topped with parmesan crumbs
  • Caramelized Brussels sprouts
  • Celery root & leek gratin
  • Cauliflower gratin –with a sauce thickened with almonds & aged cheese & dusted with paprika for a Spanish flavor
  • Green bean & mushroom casserole with fried shallots – an upscale version of the home-style classic
  • Southern sweet potato soufflé – complete with mini marshmallows
  • Maple-glazed sweet potatoes & apples
  • Roasted sweet potatoes with Fennel – for those who prefer a more savory variation
  • Honey-glazed roasted root vegetables – if sweet potatoes aren’t your thing, a nice alternative including parsnips, carrots, celery root & beets
  • Curried butternut squash and chickpeas – roasted with Indian flavors, accompanied by a cilantro-yogurt sauce
  • Creamed peas & pearl onions
