Centaur

  • Hummus with tahini - If you like to dip your fresh veggies in something else other than oil or sour cream based dressings, then hummus is the solution. To spice this dish up even more, small grilled Italian sausages will be served along side the fresh veggies.
  • Stuffed mushrooms - Bite size mushroom stuffed with spices, bacon, ham and onion. Topped with finely-grated Asiago cheese.
  • Fruity pork roulade - Pork stuffed with spices, plums, apricots ginger and chutney.
  • Original Spanish Tortilla - Typically a poor man’s quiche made with egg, potato and tomato, now brought to you in a tasty and classy form, dressed up with green onions, tomato, ham and garlic.
  • Mediterranean antipasto - A colorful platter stuffed with roasted eggplant, marinated mushrooms, sun-dried tomatoes and marinated artichokes
  • Spanish sautéed mushrooms -Sliced mushrooms, marinated for 24 hours in spices and garlic, sautéed over low heat and served hot with crunchy French bread. 

Matador

  • Chicken and bacon - Marinated and grilled chicken rolled in bacon and finished in the oven.
  • Sweet and sour chicken - Marinated and grilled chicken sauced with sun dried tomato and pineapple.
  • Baked mussels a la escargot - Mussels seasoned with garlic, herbs and butter, baked in their shells in the oven. Served with crusty bread for delicious dipping.
  • Melon or asparagus & ham - Pieces of melon or grilled asparagus wrapped in Spanish jamón Serrano.
  • Cucumber and smoked salmon bites - Cream-cheese and green-onion filled cucumber wrapped with smoked salmon.
  • Tortilla a la Playa - The original Spanish tortilla goes to the beach and is made with made with fresh grilled tuna and shrimp in place of the ham. 

Emperador 

  • Sepia a la Plancha - Squid sautéed with garlic and spices, finished with fresh parsley and lemon juice.
  • Mahi Mahi and Tomato - Seasoned Mahi Mahi baked in the oven and finished with fresh pineapple and cherry tomatoes.
  • Gambas con Jezez - Jumbo shrimp marinated & sautéed in garlic and sherry with a dash of lemon juice.
  • Gambas and garlic -Jumbo shrimp marinated in a mixture of olive oil, garlic, lemon juice, onions and other spices, slowly sautéed. Served with crusty bread so you don’t miss a drop of the cooking juices.
  • Albondigas - Our interpretation of the best Spanish meatballs we found in our travels in Spain, prepared with a special spice blend in a home made tomato sauce.
  • Atun Kebab - Tuna steaks, marinated for at least 24 hours, served on small skewers straight off the charcoal grill.
  • Kebab with lemongrass -Small pieces of pork loin marinated in lemon grass, garlic & other spices, served on small skewers straight off the charcoal grill.

Side Dishes

  • Selection of Spanish and Italian pitted marinated and/or stuffed olives.
  • Crudites with dips - An assortment of raw vegetables in season, served with seasonal dipping sauces.

Paella

The most traditional dish of Spain, typically made with whatever is available in the garden or the kitchen, and of course lots of garlic and tomatoes.  It is slow-cooked and simmered in its own broth seasoned with saffron, giving it a gorgeous golden color.  Our versions are made with the freshest seasonal meat and fish and always an assortment of vegetables.

  • Paella de Mariscos - Featuring shrimp, tuna, mahi mahi, calamari & other seasonal fish.
  • Paella de Pais -Featuring sausage, pork loin, chicken and beef.
  • Paella de Todo -The best of both worlds, featuring a selection of fish and meat.
