Perfect for dinner or on a cocktail party platter, our salmon can be served warm or room-temperature - but preferably not cold.  We hot-smoke ours, which yields a very moist, roasted salmon, perfect for any occasion.

A wonderfully meaty fish, popular with those who don't like their fish to be too "fishy" tasting.  Served with your choice of sundried tomato-kalamata tapenade or cilantro-mango salsa; fully cooked for reheating or ready to bake in your own oven.

Smoked turkey

Not just for Thanksgiving, our turkey can be served at any gathering.  We season it 24 hours before smoking, so not only is it moist and tender, but also full of flavor.  Gravy would only mask the wonderful flavor, but we'd be happy to provide it if you really want it.

Free-range, organic garlic & lemon roasted chicken

Beyond rotisserie chicken - a beautiful presentation with lemon slices under the skin, imparting a subtle lemon flavor to the gravy that goes with it.

Meat

Grilled prime tenderloin

Truly putting the "tender" in tenderloin, our USDA prime beef is steakhouse quafily.  We sear it on the grill, leaving it rare, so you can cook it to desired doneness in your oven, or we'll fully cook it for you and slice it for serving room temperature.

Smoked & barbequed fresh ham

Sounds unusual, but trust us, it's great!  The ham is smoked in a slightly spicy sauce made with chipotle chiles, heightening the smoky flavor.  We then glazed with our own zesty barbeque sauce.  Two sizes to choose from:

Lemongrass pork tenderloin

Asian spices and coconut milk create a flavorful marinade.  We recommend grill-searing then roasting, though it is also good sliced and served room temperature.

Garlic-rosemary leg of lamb

Studded with garlic and rosemary and rubbed with spices, your dining room will be filled with a wonderful aroma and the sounds of your guests saying "wow - this is lamb?"  Served with chimichurri sauce, a blend of mint, parsley and cilantro, which complements the lamb perfectly.  We sear it on the grill, leaving it rare, so you can cook it to desired doneness in your oven.
